Steps to make to make Budget Stew

  1. Mix 1 cup soup mix in at least 4 cups boiling water in a bowl and leave to soak for at least an hour, longer/ overnight if possible.
  2. When ready to cook your meal, simply cut meat (I used sausages!!), and onions, (or leeks!), into small pieces and add to a large pot with a little oil or butter. Brown off the meat and onions.
  3. Wash and peel Potatoes and vegetables (if required, or leave on the peel if you can, ( Carrots, Potatoes, courgettes, for added vitamins).) cut up small and add to the pot. Add any tin veg if you have it. Stir well
  4. Add the soup mix, and the water it was soaked in, to the pot and slowly bring to the boil. Turn down to a simmer, cover with lid. Meanwhile dissolve Stock Cubes in a little boiling water and add to the pot.
  5. Simmer for at least 40 minutes until the grains are soft, and the vegetables and meat are cooked. Check taste and add salt and pepper if needed. Serve with bread. Enjoy!!
