- 2 cup chickpea flour
- Tamarind Mayo
- 2 tsp mayo

- Choice of veggie for toppings- I used cucumber, lettuce and onion
- Enough oil for shallow frying (2-3 cup)

Pour the mix in a bowl and add 2 tsp dijon mustard, 1 tsp chilli powder, ½ tsp turmeric, ¾ tsp garam masala, ¾ tsp coriander powder, ¾ tsp cumin powder, ¼ tsp mace powder, ¼ tsp nutmeg powder, 1 tsp garlic ginger paste each, 3 tsp lemon juice, salt tastewise and mix. Let the marinade settle
- Step 2- cut the narrow part of the breast away, save it for something else. Cut the thick part in half horizontally. Marinate the chicken breast for in the marinade for a minimum of 2 hrs or overnight.
- Step 3 – making tamarind mayo- add 2 tsp mayo, 2 tsp tamarind sauce and mix.
- Step 4- In a shallow container, pour 2 cups chickpea flour. season with salt. Coat the marinated chicken pieces nicely.
- Step 5- shallow fry them in batches on med heat 3 to 4 minutes per side. Baste time to time.
