- 1 tsp ground coriander seed
- 1.5 tsp garam masala
- 250 ml beef stock
- Juice of 1 lime
- 1-2 tbl chopped fresh coriander

- Heat the oil, fry the cardamom, cinnamon, cumin seed and bay leaf until fragrant
- Add the onions, garlic and ginger paste and fresh chilli and fry for about 5 minutes
- Add the turmeric, ground coriander seed, garam masala, then the mince. Cook until mince changes colour
- Add enough stock to make it wet. This liquid will reduce little, but you don't want a soup.
- Cover pan and cook out for about 7 minutes, if there is too much liquid, take cover off and reduce.
- When ready, take off heat and stir in the chopped coriander and squeeze the lime in and combine
