- When we get the desired consistency, remove from the heat and add the grated cheese which will melt quickly, I use mozzarella but the ideal for this dish would be parmesano, if you like it you will notice it is less soft than with mozzarella and you will like it more, we plate it, add more grated cheese on top to decorate or Coriander and that's it.
