  11. 1 tsp cumin seed

  14. 250 ml beef stock
  15. Juice of 1 lime
  16. 1-2 tbl chopped fresh coriander

  1. Heat the oil, fry the cardamom, cinnamon, cumin seed and bay leaf until fragrant
  2. Add the onions, garlic and ginger paste and fresh chilli and fry for about 5 minutes
  3. Add the turmeric, ground coriander seed, garam masala, then the mince. Cook until mince changes colour
  4. Add enough stock to make it wet. This liquid will reduce little, but you don't want a soup.
  5. Cover pan and cook out for about 7 minutes, if there is too much liquid, take cover off and reduce.
  6. When ready, take off heat and stir in the chopped coriander and squeeze the lime in and combine
