- 500 g Chicken Wings skinless
- 1 Lemon juice
- 1 tbs Tomato Ketchup
- 1 tbs Thai Seasoning Soya sauce
- 1 tsp white wine Vinegar
- 1 tsp Garlic paste
- to taste Salt
- 1 tsp Black pepper (grinded)
- 1 tbs onion powder
- 1 tbs Spring onion, green part chopped finely for garnish
- 1/2 cup + 1/2 cup Rice Bran oil to stir-fry
- 2 tbs butter
- 2 tbs all purpose flour & 2 tbs cornflour to thickening with
- 2 tbs cold water
- Steamed hot Jasmine Rice
- PEANUT SAUCE DIP:
- 1 cup Roasted Peanuts, grind finely into a crunchy texture
- 1 tbs Rice Bran oil
- 1 Red onion diced very finely
- 2 tbs Thai Seasoning Soy sauce
- 1 tbs soft brown sugar
- 2 tbs Siracha chili sauce
- to taste Salt
- 1 Kaffir juice or 1 tbs white vinegar(for sweet n sour taste)

- In a small bowl put the chicken pieces and lemon juice and marinade for 10 minutes. In a wok add 1/ 2 cup Rice Bran oil, add the raw peanut and stir fry until just begin to change colour. Remove very quickly as the peanuts will carry on cooking inside even after been removed. Remove into a small bowl and Let it cool. Then put the peanuts into a blender and blend into a paste but just into a crunchy texture of the peanut butter.
- In a wok return the lefover of the oil into the wok and add extra 1/2 cup Rice Bran oil and heat the oil again. Add the chicken pieces & stir-fry until just browns on both sides, remove & put aside.
- In the wok leave 1/2tbs oil add 2tbs butter,add garlic,Thai soya sauce,wine vinegar, tomato ketchup,onion powder, salt,black pepper, mix all & stir with a wooden spoon for 1'.In a small bowl put the flour,cornflour & cold water & mix.Add the flour mixture into the wok & mix all together with the spoon and stir until slightly thicken,then put back the fried chicken, mix well until all chicken pieces are well coated.Turn off heat.Remove chicken.
- Transfer the cooked chicken on the serving dish, sprinkle top with spring/green onions. Cover top dish with kitchen towel to keep warm.
- Now make π₯the Peanut sauce as dip: in a wok put 1 tbs Rice Bran oil heat then add red onion, soft brown sugar, salt, 2 tbs Siracha chili sauce and mix then add the crunchy peanut butter and mix all together. Add kaffir juice or 1tbs white vinegar.Taste the season and the vinegar.Remove and put the Peanut sauce into a serving jar.To serve: on an individual plate put the hot steamed Rice, top with the fried chicken pieces.Pour a scoop of sauce on top of the chickenππΈ
- Serve warm: put the Chicken Wings on top of steamed hot Rice as bed and to serve with the side dish Peanut Sauce Dip which is to be spread on top of the Chicken wingsππ
