have not made paella in a while now so this is one of the Spanish versions. It is so good I love it.the flavours mixed in this are amazing we loved it. My Daughter came and she moans about rice and noodles she is always hungry after them she says, but anyway she loved this with a second helping.

- 1 Medium yellow onion (I used red had no yellow)
- 1 Red bell Pepper seeded and diced
- 4 Cloves Garlic minced
- 1/2 tsp Smoked Paprika
- 8 oz smoked or semi smoked Spanish chorizo, cut into 1/4 in
- 2 Cups Arborio Rice
- 1 tin Diced Tomatoes
- 1 large pinch of Saffron threads
- 3 1/4 cups chicken broth plus 2 tbls divided
- 1 Cup Frozen peas
- Salt and pepper to taste
- Chopped italian parsley to garnish
- Plus 2 Lemon wedges

- Combine the Saffron threads with the chicken stock and set aside let it infuse
- Season the chicken with salt and pepper both sides, heat up 1 tbls olive oil in a 12 inch shallow skillet or paella pan.
- Cook the chicken about 7-8 minutes each side until browned and cooked through. Remove from the pan to a plate and set aside.
- To the same pan add the Garlic, onions, bell peppers and cook adding more oil if needed cook until softened and fragrant.
- Next add the Chorizo and cook for 3 minutes when browned stirring occasionally then add the smoked Paprika stir in.
- Add diced tomatoes stir and cook for 2-3 minutes.
- Stir in 3 1/4 cups Chicken and Saffron liquid, season with 1/2 tsp Salt and 1/4 tsp ground Black pepper. Heat up then add the chicken and peas to the mix and the rice stir once boiling turn down to low simmer.
- Cook uncovered for 20 -25 minutes rotating to make sure its all being cooked this will also stop the bottom burning.add the extra chicken stock if needed.
- Remove from heat and cover with silver foil for 10 minutes during this time the rice will absorb all the liquid and flavours.
- Serve with the Italian chopped parsley and lemon wedges and Enjoy.
