- Once the meat is seared on all sides place it onto a baking tray and put it in the hot oven for 15-20 minutes depending on your preferred finish and the size of your cut. this cut was a large tomahawk and was cooked for 20 minutes to a medium rare.
- Whilst the meat is roasting you can prepare you potatoes. place your new potatoes into boiling water and cook for 15 minutes till cooked. My new potatoes were a little oil and had started to sprout with tiny "potato eyes" i just removed the unwanted imperfections of the the skin and halved or quartered the potatoes as they were a little big. When cooked remove from the water and add a little knob of butter.
- Do the touch test to see how well done it is.Once done, remove from the bone.
- Slice and top with generous amount of dressing. Serve with yoru sides.
