- Heat a flat cast-iron skillet over medium-high heat. Add a tortilla and cook for 2 minutes until it starts to bubble and brown spots appear underneath. Turn over and cook for a further minute.
- Lay them on a tray individually and let them dry. Cut into triangles and bake in a preheated oven 350 °F (175 °C) for 6 minutes then turn them over and bake for a further 6 – 9 minutes until slightly colour.
- Place the chopped avocado, tomato, spring onions, kalamata olives, parsley stalks and pickled jalapeño on top of the tortilla chips. Place the bresaola slices on top and sprinkle with the cumin seeds and quesillo de Oaxaca.
- Place under a medium hot grill for 5 minutes.
