- 1/2 tsp mace powder
- 6 cloves garlic
- 2 inches ginger
- 1 tsp coriander seeds
- 3 cups water
- 1 tsp salt or (to taste)
- For Masala (curry)
- 1/4 cup oil or ghee
- 1/2 medium sliced onion
- 1/2 tsp ginger
- 1/2 tsp garlic paste
- 1/2 medium chopped tomato
- 1 tsp cumin seeds
- 1/2 cup yoghurt
- 1/2 tsp coriander powder
- 1/2 tsp red chilli powder or (to taste)
- 1 tsp garam masala powder
- 2 green cardamom
- 1/4 tsp yellow food colour
- For garnishing (optional)
- 1 tablsp Mint leaf
- 1 tblsp coriander leaf
- 4-5 lemon wedges
- 1 tomato slice
- 2 whole green chillies

First wash the rice in a plain water 3 to 4 time & soak the rice in a water 40-45min.

Sprinkle fried onions, coriander leaf, mint leaf tomato slice, lemon wedges, yellow food colour on the rice, add a tbsp of ghee or oil and seal the pot with foil or kitchen tea towel so that the flavors do not escape.

Cook on a low heat for 10-15 minutes or till the rice is done.

Add this masala to the prepared yakhni (stock) in the cooking pot, turn on the heat.add the rice & cook the rice uncovered for 5 minutes or till water dries up.
