  9. Put the Greek yoghurt into a bowl and half the coriander. Season with salt & pepper. Set aside.
  10. Fold the cooked rice into the beef and mix in the remaining coriander.
  11. Serve in bowls with a dollop of coriander yoghurt. Sprinkle the toasted flaked almonds and sliced spring onion.
